If not, you definitely should.............they're delicious!!!

In case you don't know, Parsnips are a relative of carrots........they look like a carrot only lighter in color............they're also good for you!!! According to Wikipedia......The parsnip is richer in vitamins and minerals than its close relative, the carrot. It is particularly rich in potassium with 600 mg per 100 g. The parsnip is also a good source of dietary fiber. 100 g of parsnip contains 75 Calories (230 kJ) of energy

They are very easy to fix............just peel them like you would a carrot.  Then, cut them into 'matchstick' pieces (you know, kind of like small french fries).   Toss the cut up parsnips with a little olive oil and spread them on a baking sheet.  I bake them in my convection oven for about 12-15 minutes at 400 degrees.   Place them on a serving plate, grind some fresh sea salt over them and ENJOY!!!   They are much sweeter than carrots and very addicting!!!
