1/2 pail of Smelts
1 tbsp. salt
1/2 tbsp. pepper
3 c. Pancake mix
peanut oil

Clean and wash smelts. Mix pancake mix with salt and pepper.  In a frying pan, pour oil in till there is a quarter of an inch of oil in bottom of pan.  Turn pan on to medium/high heat.  Dip smelt into pancake mix and place in pan of hot oil.  Let smelts fry till crispy on outside.  Remove from pan.

I'll have to try that.........I usually use a mixture of flour and corn meal to fry any kind of fish........don't think I've ever tried pancake mix...........any special kind of mix??

I don't think so.  I just use my Aunt Jemima stuff.  Give it a shot.

Well, I bought some smelt (frozen) over the weekend, so will try it one of these days.  I don't know what kind of mix I've got.........don't like pancakes, so don't fix them........bought the mix for a recipe I wanted to try.........I'll have to see if I can find that recipe and post it, too.
