 Grin I quit teaching and now I am a truck driver.  Any idea for healthy food that last five days in a fridge and can be heated in a hot box?

Beens. Hummus,  jerky, raw potatoes, hard boiled eggs, cheese, tomatoes, cucumbers, apples.

 I might suggest juicing. You get the vitamins and nutrients, and it keeps well.

You might be able to find a recipe for celery bars, low calorie, high fiber.

Hot box is like a lunch box that plugs into a cigarette lighter and warms your food up.  Can't cook in it though.
