These pickles are not actually canned.........they MUST be stored in the refrigerator.

6 cups sliced fresh cucumbers (sliced thin)
1 c. sliced onion
1 green pepper, sliced lengthwise
1 red pepper, sliced length wise

1 cup cider vinegar
1 & 1/2 c. sugar
1 TBSP canning salt

Mix all ingredients together, then pack in jars.  (the liquid will only come up about halfway in the jars at first, but not to worry.......it will draw moisture from the veggies and fill the jar)

Store in the refrigerator so they don't work.  It's best to let them sit for a day or two before eating them.

"Life should NOT be a journey to the grave with the intention of arriving safely in an attractive and well preserved body,  but rather to skid in sideways - glass of wine in one hand - chocolate in the other -body thoroughly used up, totally worn out and screaming 'WOO HOO, WHAT A RIDE!!!"
