Chili Relleno Bake

1 Lb Hot Sausage
1 c. onion, chopped
2-3 cloves garlic, minced
3 cans whole green chilis
2+ c. shredded Cheddar (divided)
4 eggs
1/4 c. flour
1 & 1/2 c. milk
1/2 tsp salt
Tabasco (I use 10-12 shakes, you may use more or less to taste)

Brown sausage then add onion and garlic (drain fat)

9X9X2 pan.........spray with cooking spray

Drain chilis and line the bottom of the pan with half of the chilis.
Layer with 1 & 1/2 c. of the cheese
Add meat mixture on top of the cheese
Top with the remaining chilis

Beat together the eggs & flour until smooth
Add milk, salt and Tabasco.  Blend well
Pour over layered ingredients in pan.

Bake at 350 degrees for about 40 minutes
Top with more cheese
Let stand about 5 minutes before serving.

(Make sure to 'open' the chilis.....so it is a single layer... before you place them in the pan)
