Hi !!
I thought I'd start this out with one of our family favorites......very easy and very good!!

Pea Pickin' Cake

Cake:
1 box yellow cake mix
1/3 c. applesauce  (if you're not worried about fat, you may use oil)
1 small can mandarin oranges (undrained)
3 eggs (or 3/4 c. fat free egg product)

Mix ingredients together.  Lightly spray your pan/s with cooking spray.  Bake in either 2- 8 or 9 inch layer pans or one 9 by 13 pan.   (If you plan to make this a layer cake, be sure to line your pans with waxed paper. ) 
Bake at 350 for 20-30 minutes, until tester comes out clean.
Cool thoroughly

Frosting:
1 large can crushed pineapple
1 - 8oz. bowl of  whipped topping  (I use the low fat variety)
1 large box of instant vanilla pudding
Beat together and frost cake


This is a light and tasty dessert for any time of the year......
I've never found anyone that did not like it.......hope you do, too!!  Smiley
