Salmon Patties

15 oz. can of salmon
3-4 TBSP finely chopped onion
10-12 crushed Ritz crackers
1 egg, beaten
2 TBSP lemon juice
1/4 cup of liquid.....you may either use the liquid from the salmon can or you may use milk.
Dash of salt and pepper

Pick through the canned salmon and remove the large bones as well as the skin and dark flesh.  Flake the salmon and lighty mix in the rest of the ingredients.  It may be necessary to add a few more crushed crackers so you can form the patties easily.  Divide the mixture into 4-6 patties, depending on how large you like your salmon patties.

Place shaped patties in a hot skillet, which has been well oiled.  Fry patties until nicely browned, flip and brown the other side.
